this makes two big chicken pot pies. I typically freeze one of them and eat the other.

Instructions
Step 1
Cook first 6 ingredients in crockpot until chicken is cooked through
Step 2
If freezing or putting in the fridge first, bake bottom crusts only for 5-10 minutes to ensure it cooks in the oven
Step 3
Put all ingredients in 2 of the pie shells
Step 4
Top with cheese and other pie crust
Step 5
Brush pie crusts with egg whites
Step 6
Bake in 350 oven for 30 minutes or until crust is nicely browned
Step 7
If cooking from frozen, thaw for 2 days in the fridge
