Instructions

Step 1
Add the olive oil to a large pot over medium heat. When the oil begins to shimmer, add the cauliflower, potatoes, black pepper, allspice berries, connamon stick and cloves. Saute for 4 minutes or until the cauliflower begins to brown

Step 2
Add the tomato paste and sea salt. Continue heating, using a wooden spoon to swril the tomato paste around the pan until the color changes to a brick red

Step 3
Add the hot water and stir gently. Reduce the heat to low, cover and simmer for about 30 minutes or until the cauliflower is tender and the sauce has thickened. (If the sauce is still watery, remove the lid and simmer until the sauce has thickened). Remove the allspice berries, cinnamon stick and cloves.

Remove the cauliflower from heat and set it aside to cool for at least 10 minutes before service. When ready to serve, transfer the cauliflower to a large serving bown and spoon the sauce over the top
