Borhani is a sour, salty, and little bit spicy Bengali traditional yogurt drink. This drink is very popular during weddings in Bangladesh. After eating heavy meals like Biryani, and Polao it’s good to drink Borhani to feel refreshed and to aid digestion.

Sour Yogurt (tok doi)

Boil 2 cups of whole milk for 4-5 minutes, then let it come to 120F temperature, or try touching it with a finger to see if the temperature, is bearable enough then add 2 tbsp plain yogurt. Mix everything well then strain the mixture in a pot or bowl. Let it steam in a low heat for about 20-30 minutes.

To make the Borhani blend all the Spices together. In a pot add the sour yogurt (store bought is fine), spice blend, salt to taste, water and sugar syrup or white sugar. Adjust the spice as you like, and adjust the water based on your desired consistency of the drink (less water for thicker drinks).

Everything can be mixed in a blender or use a whisk to mix everything well, add some ice and wait for 5 minutes to soak in all the spices well.
Step 6
Strain the Borhani well and throw away the remaining spices, and serve it with ice.
