MUSHROOM PAPRIKÁS + NOKEDLI 🇭🇺
Hungary has some great comforting dishes! Usually paprikás is made with chicken but I used mushrooms instead. Together with the Nokedli (small noodles) it’s an amazing meal! 🥰
IMPORTANT: this is not an authentic recipe since I’ve never tried the real deal but I gave my best. :)

RECIPE (4 servings, 40min prep time):
-about 600g mushrooms (I used king oyster mushrooms)
Slice and fry in a pan until all the water is released. Then remove fro the pan.
-1 big onion
-4 cloves garlic
-1 red pepper (optional)
Dice everything and fry in some oil until softened.
-3 Tbsp sweet paprika
-1 Tbsp flour
-3 Tbsp Ajvar
Stir it in.
-1/2 cup (125ml) veg stock
-1/2 cup (125ml) tinned tomatoes
-1/2 cup (125ml) vegan cream
-salt and pepper to taste
Stir everything in.
Adjust the seasoning to taste and let it simmer 15min.
Nokedli:
-2 1/2 cups (320g) flour
-2/3 cup (80g) semolina
-a pinch of salt
-1 2/3 cups (400ml) plant milk
-4 Tsp oil
Whisk everything together and bring a pot with salted water to a boil.
Either drop in small Nokedli with a spoon or use the kitchen appliance I used in my video.
Serve with vegan yogurt.
