Stuffed Peppers with Pearl Couscous Salad

Instructions

Step 1
Set the oven to 220* C
Step 2
Cut the peppers in half and deseed them
Step 3
Cook the peppers with Olive Oil, Salt & Pepper for 10-15 mins
Step 4
Prepare and cook the Couscous according to the packaging
Step 5
Shred the carrot(s) and finely chop the shallot, garlic, and parsley
Step 6
Heat up a small amount of oil in a frying pan and cook the meat on high heat. Fry the meat along with the shallot, and carrot for 3-4 min or until browned.
Step 7
Add tomato pure, garlic, and water (1/2dl - 2 portions). Let is simmer for 2-3 mins
Step 8
Mix in creme fraiche (1tbsp - 2 portions) and season with salt & pepper until desired taste
Step 9
Fill the pepper halves with the meat mixture and cover with cheese. Pop these into the oven for 5-10 mins
Step 10
Mix together the chopped parsley and the remaining creme fraiche with the cooked couscous. Season with salt and pepper and let it sit under a lid.
Step 11
Put everything together on a plate and enjoy!
