Instructions
Step 1
Preheat oven to 180 degrees
Step 2
Heat oil & butter (medium heat)
Step 3
Add leeks, stir & put lid on pan - cook for a few minutes until leeks are soft, checking occasionally that they're not burning. Add garlic halfway through. (Also add thyme & lemon zest if using)

Add flour & cook for a minute or 2, stirring constantly (it'll look like a congealed mess, but that's ok)
Step 5
Slowly add the stock, stirring all the time, until you have a smooth, thickish sauce. Stir in the mustard.
Step 6
Add the peas & chicken & warm through (putting the lid on helps)
Step 7
If the sauce is too thick, add a little milk
Step 8
Spoon the chicken into your Mum's deep casserole dish.
Step 9
Carefully spoon the warm mash on top & smooth it all the way to the edge of the dish.
Step 10
Put the casserole dish into a roasting tin to catch any spillage & cook for about half an hour until the potatoes are browned on top & chicken sauce is starting to bubble up at the sides.
Step 11
Serve with lots of buttered carrots.
Step 12
You could also add chunks of ham at the same time as the chicken if you have any.
