Step 1
Heat oil in large pan over medium heat. Add onion and cook until soft.

Add chorizo, red capsicum and garlic. Cook for 3 minutes, tossing well

Add rice and stir until coated. Add stock, saffron, paprika, chilli flakes, tomato's and white wine. Bring to boil then simmer on low for 10 minutes.
Step 4
Add prawns pushing them into the rice and cook for a further 10 minutes. Squeeze lemon over paella and season with s&p.
Step 5
Garnish with lemon and parsley. Serve with aioli.
