Method:
Put your pasta on to cook for 9mins or until al dente, run under cold water to stop it over cooking and set aside. Melt butter in a deep pan, add your spices with your flour and cook out for a minute till combined and paste like, take your milk and slowly add to the pan while mixing. When fully emulsified add half the cheese (grated) to the mix and stir till melted and more milk if needed and take off the heat. Take your pasta and Bang it in that cheese sauce stir it up adding the chorizo as you go.
Plate into an appropriate baking dish top with more cheese and pop under the grill till melted and Bam! We eating fam. I dded some dabs of pesto and a healthy pour of white truffle oil on it just because. Enjoy!
