Pinto beans
or beans of your choice
3 cupslong grain rice
For every 1 cup of rice you use two cups of water
Sofrito
yellow & red onion, plum tomatoes, garlic, green & red pepper, cubanelle pepper, bouillon cube, black pepper, adobo, salt, oregano, cilantro, squeeze of lime
Tomato sauce
or tomato paste
olive oil
Cilantro
Seasoning
adobo, salt, garlic powder, sazon achiote, oregano
Instructions
Step 1
Heat the stove to medium heat and add olive oil to the pot. Add in your sofrito, tomato sauce, seasonings and beans. Add water and cook/ stir the mixture. ( I like to squeeze some lime juice and add cilantro while water is boiling)
Step 2
Rinse your long grain rice and add it to your pot. ( make sure rice is covered by 1 inch of water) Stir everything and bring it to a boil on high until water begins to evaporate. Once the water is absorbed, stir the rice and cover with lid.
Step 3
Let the rice cook for 20 minutes over low heat.
Step 4
Fluff your rice and serveš¤
