Ingredients

2tuna steaks
sushi grade

3 tablespoonstamari

1 tablespoontoasted sesame oil

1 teaspoonschili flakes

1green onion
thinly sliced

2 cupssushi rice
cooked

2 tablespoonsrice vinegar

1 teaspoonsugar

pink sea salt

⅓ cupavocado oil mayonnaise

1 tablespoonssriracha

1nori sheet
toasted, cut into thin strips

1 cupcucumber
diced

1 cupavocado
mashed

½ cupwonton crisps
Instructions
Step 1
In a medium bowl, combine the tuna, 3 TBSP soy sauce, sesame oil, red pepper flakes and green onion. Toss to mix well.
Step 2
In a separate medium bowl, combine the rice with the rice vinegar, sugar and salt. Toss to mix well.
Step 3
In a small bowl, stir together the mayo, sriracha and the remaining 2 tsp of soy sauce.
Step 4
In a dry 1-cup measure, layer 1/4 cup of the tuna. Add 1/4 cup each of the cucumber then avocado. Pack 1/4 cup of the seasoned rice. Invert the vip onto a plate layered with nori and tap the bottom of the cup to release the stack. Repeat with remaining ingredients to create 4 stacks.
Step 5
Top each stack with microgreens and/or wonton crisps, if desired. Serve with spicy mayo for dipping.
