While the base recipe remains the same, variations can be made with choice of vegetable, including potatoes, green turnip (nookal/knol khol), taro root (arvi), lady fingers, beans, bottle gourd (kaddu/lauki), etc.

Instructions

Step 1
Put oil in a pressure cooker. When hot, add chopped onion and sauté till golden and caramelised.
Step 2
Then add the mutton pieces and along with it- salt, ginger garlic paste and turmeric. Cook for a while.
Step 3
Add chilli powder and coriander powder. Mix. Add the chopped tomatoes and cook till the tomatoes are tender and well dissolved.
Step 4
Add the grounded tomatoes and let it cook for a while.
Step 5
Add enough water and cook for 8-10 whistles.
Step 6
Add choice of vegetables along with coconut milk and coriander leaves. Let it cook again for 2 whistles. Serve.
