Ingredients

For the dry spices
1 tspChilli Powder
mild
1 tspground coriander
1 tspgaram masala
1 tspMango Powder
we used Mango Masala
½ tspground black pepper
½ tspground cumin
½ tspground turmeric
¼ tspSalt
Icelandic or Sea or Black or Welsh
¼ tspGround Fenugreek
¼ tspAsafoetida
¼ tspgarlic granules
For the rest of the Marinade
Instructions
Step 1
Par cook the potatoes either microwave 4 mins or boil until just cooked.
Drain and set aside.
Step 2
Mix the yoghurt and ginger with half the dry spices. Put the remaining dry spices in an air-tight jar and store in a cool, dark place until next time.
Step 3
Toss the drained potatoes in the spicy marinade, cover and chill for 30 minutes. Meanwhile heat the oven to 200° Fan
Step 4
Spoon out the potatoes into an lightly oiled ovenproof dish or balti, reserving the excess marinade. The potatoes should be well coated in the marinade but not swimming.
Step 5
Roast the potatoes for 30 minutes, turning once
Step 6
When the potatoes are cooked to your taste remove from oven. Pre-heat grill to high
Step 7
Place potatoes under grill until slightly charred on the edges
