Instructions
Step 1
Score the skin on the duck breasts in a criss cross. Season and drizzle honey and balsamic.
Step 2
In a hot frying pan, seal the meat skin side down for about 3 mins until crispy brown then briefly flip the other side.
Step 3
Remove and bake the duck for 15-20 mins @ 180c
Step 4
Wrap in foil and rest
Step 5
To make the sauce, add the wine, beef stock and jam to a pan and simmer to reduce for 10 mins.
Step 6
Add the frozen berries and continue to simmer until bubbling
Step 7
Mix the cornflour in a glass with a little water and add to the sauce to gain the required consistency
