Cauliflower, dirty rice

I was first introduced to southern dirty rice by my fiancé, when visiting their North Carolina home. And I immediately fell in love. The seasoned rice with the ground meat was perfect! So, I had to make a keto friendly version. One thing you’ll learn about me is that I don’t like cauliflower rice. But this recipe is the exception to that rule. The bold flavors and meaty ingredients make this cauli rice a winner. It’s full of meat and veggies for a fantastic protein packed side, but it can also be served as a main course if you’d like.

Instructions

Step 1
In a large cast-iron or nonstick skillet over medium high heat, add the avocado oil and 1 tablespoon of the butter. Once it’s melted, add the onion, bell pepper, and celery. Sauté for about three minutes, or just until the veggies are slightly browned, but not cooked through. Add the tomato paste, and stir well for 30 seconds to combine it.
Step 2
Move the veggies up against one side of the pan, and add the sausage to open space. Smash the meat into one layer on the pan, but do not break it up yet. Let the meat sear on one side for about two minutes, or until it forms a dark brown crust, then flip it over, and repeat. It’s almost like a giant burger patty. Once both sides have fully browned, chop up the meat into small pieces, and stirred in with the veggies. Let it cook for two minutes.
Step 3
Add in the salt, garlic powder, pepper, paprika, Cajun seasoning, and cauliflower rice. Stairwell to fully combine ingredients, and cook the rice for 3 to 4 minutes, or until nearly all of the liquid has evaporated, stirring regularly make sure the cauliflower isn’t completely soft, as it will continue cooking after you remove the dish from the heat. Turn off the heat, and stirring the remaining tablespoon of butter, to cook the rice and make it extra rich and delicious.
Step 4
For the dirty rice into a large serving bowl, and serve it while it’s steaming hot.
