Simple Swiss Chard

This is my go to combo for deep bitter greens like collards or swiss chard. Whenever you cook with deep greens that are bitter, it's always a good idea to hit it with salt and vinegars to draw out the natural sweetness from the vegetables.

Instructions

Step 1
Separate the stalks from the leaves of the swiss chard. Chop the stalks into desired size. Roll the leaves and slice into desired size.
Step 2
Peel and thinly slice the garlic.
Step 3
Cut the salami into desired size, ideally the same size as everything else.
Step 4
start the salami in a cold pan and set to medium high heat. The fat and oils will begin to render out from the meat and act as the oil needed to cook the rest of the dish.
Step 5
Once the salami has browned a bit, add the garlic to the pan until golden brown.
Step 6
Add the stalks first and cook for about 30 seconds. Then add the leaves right after wards. Cook for about 2 minutes.
Step 7
Remove the pan from the heat and add the vinegar. Toss and serve.
