Baked Nigerian Jollof Rice with Chicken liver and gizzard

Begin by cooking your Chicken gizzard and liver, saving the meat stock for later use. Then, blend your tomatoes, scotch bonnet pepper, and bell peppers.
Next, fry onions and tinned tomatoes, adding in bay leaves for added flavor.
Allow the blend to fry until it becomes dry, then add your preferred spices. In this video I used: Chariot, Onga, Maggi Jollof, Knoor, Thyme, Ginger, Jollof Seasoning, chili powder, and Ground red pepper.
Finally, add the meat stock and bring to a boil for 10 minutes.
Preheat your oven to 350°F or 400°F, pour the mixture into a baking pan
Wash your rice, pour into the baking pan and mix well
Place in the oven and bake for 60-75 minutes. Once finished, take it out of the oven and mix well.
Mix with your previously fried Chicken gizzard and liver, and serve. Enjoy!
