Instructions
Step 1
Add garlic, salt and 2 tblspn lemon juice to processor and run for 10-20 seconds
Step 2
Stop processor, scrape down sides, then run processor for another 10-20 seconds. Repeat process 3-4 times until garlic starts to turn pasty and crushed. This very important step to reach before proceeding. Turn on processor and leave on until the end.
Step 3
Start adding oil to processor at very slow rate, in a very thin stream, each 1/2 cup at a time. After 1st cup you will see the garlic emulsify and turn into paste.
Step 4
Add 2 tblspn lemon juice (slowly) and alternate juice and oil letting each incorporate before proceeding.
Step 5
Repeat process of alternating until all ingredients used up... should take 5 minutes.
Step 6
If you see turning liquid it may have broke.... try adding ice cube.
Step 7
Ensure all ingredients are room temp. If using large food processor, use at least 1 cup of garlic cloves. Add oil and lemon juice SLOW, SLOW, SLOW!! Breaks easily.
