1 lbground beef
taco seasoning

drained and rinsed

Instructions
Step 1
Preheat oven to 375F and line a baking sheet with parchment paper or tin foil and spray lightly with oil spray.
Step 2
In a pan- add 1 tablespoon of olive oil and ground beef. Break up beef and cook until golden brown and crumbly. Mix in taco seasoning.
Step 3
While the beef is cooking- in another pan, add the last tablespoon of olive oil, onion, bell pepper, and corn. Sprinkle with salt and pepper to taste. Cook until veggies soften and golden brown.
Step 4
Time to assemble- add tortilla chips to the baking sheet in a single layer, top with 1 cup of cheese, 1/2 can black beans, 1/2 ground beef and 1/2 veggie mixture. Top with 1 cup of cheese. Add another single layer of chips followed by the rest of the beans, ground beef, and veggie mixture. Top with the remaining 2 cups of cheese.
Step 5
Bake for 8-10 minutes, until cheese is melted.
Step 6
Top with your favorite toppings and enjoy!
