Carrot and swede mash

A tasty vegetable dish which is a good lower-fat alternative to mashed potato.

Instructions

Step 1
Cook the carrots and swede together in a pan of boiling salted water for 20–25 minutes, until tender.
Step 2
Drain and return to the pan.
Step 3
Add the butter and horseradish, mash well and season to taste.
Step 4
Chefs Tip: For a lactose-free version, use 1 tbsp olive oil rather than butter and Dijon mustard instead of horseradish.
Step 5
Chefs Tip: You can make this the day before you need it then microwave or bake in an ovenproof dish.
Step 6
Freezing instructions: Defrost then heat in the microwave to serve.
