Base

130ggreek yoghurt

125ggluten free self raising flour

⅛ tspxanthan gum

¼ tspgluten free baking powder

½ tspsalt

Instructions
Step 1
Preheat your oven to 210C Fan / 230C.
Step 2
Add all your base ingredients into a bowl and mix together. I initially just do this with a spatula and then as it starts to come together I use my hands to ensure it's all pushed into a big ball.
Step 3
Knead the dough briefly so it's smooth and combined (you might need a little flour if it's a bit sticky, it shouldn't be)
Step 4
Rest for 30 minutes
Step 5
On a lightly floured piece of non stick baking paper use a rolling pin to roll out your dough. I roll mine to around 0.5cm thick in a fairly round shape. The thinner the better.
Step 6
Bake for 6 minutes, till the crust is lightly coloured
Step 7
Scatter pancetta and olive oil on the base and put back in the oven for 10 minutes
Step 8
Top with shredded mozzarella and cook for 3 minutes
Step 9
Top with rocket and Parmesan shaves, cook for dinner minute
Step 10
Rest for 5 minutes
