Instructions
Step 1
In a pot- add olive oil, onion, celery & carrot, cook for a few minutes. Add in garlic and rice and cook for another minute or so to just slightly cook.
Step 2
Pour in chicken broth & lemon juice, simmer for 15-20 minutes or until rice is cooked.
Step 3
Add in shredded chicken & seasonings.
Step 4
Serve right away & enjoy!
