I have a confession: I’ve never been a frosting lover. Even as a kid, I’d scrape off the frosting from my birthday cake. This is a delicious yellow snack cake with cream cheese in the batter which keeps it from becoming dry. Dollops of jam are swirled into the batter and finished off with a dusting of powdered sugar. A treat for any time of day.

Instructions
Step 1
Preheat the oven to 350 degrees. Grease a 13x9 baking dish.
Step 2
Beat the cream cheese, butter, and sugar together until smooth.
Step 3
Add in 3/4 cup flour, eggs, milk, vanilla, baking soda, baking powder, salt. Beat for 1 minute.
Step 4
Add in remaining 1 cup flour and stir to combine .
Step 5
Spread batter into baking dish. Stir jam and then dollop onto various areas of cake batter. Use knife or chop stick to swirl jam into batter.
Step 6
Bake for 30-35 min. Place on cooling rack for 30 min still in pan.
Step 7
Dust with powdered sugar and slice into squares. Enjoy!
