Vermicelli with Sausage and Spinach

Ingredients
6 servings
1 lbsmoked sausage
cooked, halved lengthwise and cut into 1/2-inch slices
¾ cuponion
chopped
2garlic cloves
large, chopped
2 tspolive oil
2 x 14 ozreduced sodium chicken broth
cans
¼ cupwater
8 ozdried vermicelli pasta
or angel hair, broken in half
1 x 9 ozbaby spinach
fresh, prewashed
¼ tspblack pepper
⅓ cupwhipping cream
Instructions
Step 1
In a 4-quart Dutch oven, cook sausage, onion, and garlic in hot oil over medium-high heat until sausage is lightly browned and onion is tender.
Step 2
Add broth and water to Dutch oven; bring to boiling. Add pasta; cook for 3 minutes, stirring frequently. Add spinach and pepper; cook about 1 minute more or until spinach wilts. Stir in cream. Serve immediately.
