Instructions

Step 1
Melt the coconut oil in a large frying pan over a medium to high heat and roll in the meatballs until they are browned all over.
Step 2
Meanwhile, put the onion, olives, garlic, red pepper, parmesan and tomatoes into a food processor and blitz until pretty much smooth.
Step 3
When the meatballs are brown, tip the tomato mix into the pan and bring up to the boil. Simmer for 8-10 minutes, or until you are happy the meatballs are cooked through, then chuck in the spinach spinach and gently stir it through the sauce until the leaves have wilted.
Step 4
Finally, rip up the mozzarella and dot it about in the sauce. Give the whole lot 1 minute with a lid on and then spoon it triumphantly into a bowl.
Step 5
Finish by scattering with pine nuts and chopped basil.
