Chewy Oatmeal Chocolate Chip Cookies

Instructions

Step 1
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the chips, then the quick oats.
Step 2
Let dough chill in the fridge for at least 30 minutes before baking (this helps prevent the cookies from flattening). You can also put the cookie dough into saran wrap and roll it into an approximately 2-inch roll and freeze/refrigerate for up to 48 hours before cooking.
Step 3
Preheat the oven to 335 degrees. Spoon cookies onto a cookie sheet in 1-inch balls, leaving enough space between cookies for them to spread out while cooking. Bake 12 minutes or until slightly golden at the edges of the cookies. Allow cookies to cool on a baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
