Creamy Baked Mashed Potatoes (vegan)
Made this the other night for a thanksgiving style dinner. It was SO good and super creamy!

Ingredients
6 servings
3 spoonfulsvegan sour cream
0.5 tubvegan cream cheese
almond milk
or any unsweetened, plain plant milk
4 patsbutter
4potatoes
medium, boiled with parsley, basil, salt, pepper, garlic and onion powder

garlic powder
onion powder
dried parsley
green onion
paprika
mozzarella cheese
Shredded, any preferred vegan cheese
Instructions
Step 1
Preheat oven to 350 degrees
Step 2
Blend all ingredients EXCEPT paprika, green onion, butter, and mozzarella in a bowl with an immersion blender until desired consistency (I like to keep small chunks of cream cheese)

Step 3
Place mixture in a baking dish and add slabs of butter on top

Step 4
Bake for 30 min, then sprinkle your cheese on top, and bake for another 10 min

Once it’s done, sprinkle on your chopped green onions and some paprika
