Yet another “Oh Josh, why even waste my time making my own ketchup?” First off, when did your time become more important than ketchup? Second off, the reason we make our own is so that we can control every variable of flavor to ultimately create our ideal ketchup that can be leveraged in so many amazing ways. So we have to do it.

Instructions

Step 1
In a medium saucepan, stir together all of the ingredients. Place over medium-high heat. As soon as it begins to bubble, immediately reduce the heat to medium-low. Let the mixture simmer and reduce, stirring occasionally, for 4 to 5 minutes, or until reduced and glossy.
Step 2
Transfer to a separate container. Cool completely, covered with a lid or plastic wrap so it doesn’t form a skin. It’s ketchup…you know how to use it. (And if you don’t, there are lots of recipes in the book.) Store in an airtight container in the refrigerator for up to 1 month.
