Instructions
Step 1
Heat oven to 375 degrees F.
Step 2
In a shallow baking dish just large enough to hold the pears, place pears cut-side down.
Step 3
Pour apple juice and water over the pears. Drizzle with honey.
Step 4
Using foil, loosely cover the dish and bake approximately 35 minutes or until pears are tender.
Step 5
While pears are baking, prepare granola.
Step 6
In a shallow baking pan or pie plate, toast granola in the oven for 10 minutes; set aside to cool.
Step 7
Into a colander (lined with paper towels)placed over a bowl to catch drips, pour in the yogurt and drain approximately 30 minutes.
Step 8
Into 4 shallow bowls, divide the yogurt. Over the yogurt, place a warm pear, cut-side up. Top with toasted granola and drizzle with syrup. Garnish with mint leaf (optional)
