Instructions
Step 1
Peel and discard the top two leaves from each cabbage. Use a sharp knife to remove the cores.
Step 2
On a very large cooking pot bring water to a boil. When boiled add 1tbsp salt and put the first cabbage in the water. Cook for about 5 minutes, then rotate and continue cooking for another 5 minutes or until you will be able to pull off the leaves as they begin to soften. Repeat with the second one.
Step 3
When the leaves are done remove them to a plater.
Step 4
Rinse the rice and cook in salted water until semi-ready. Drain and set aside.
Step 5
Finely chop the onions. In a pan heat 1tbsp olive oil with 50g butter, add the onions and cook until browned, stirring occasionally. Add black pepper and 1 tbsp paprika.
Step 6
In a large bowl combine ground beef, rice and onion mixture. Add salt and mix well.
Step 7
Prepare the leaves. Large leaves cut in a half, removing the stem, so you will end up with two leaves. For the small leaves cut off the thickened part of the stem to thin the leaf, without cutting will the way through.
Step 8
Place about 1-2tsp of the filling on each cabbage leaf. Roll once away from you to cover the filling. Flip the right side of the leaf to the middle, then flip the left side. Keep rolling until you have a small little roll.
Step 9
Place a few cabbage leaves on the bottom of the 3lt cooking pot, then start to assemble Holubtsi tightly.
Step 10
For the sauce, In a large skillet heat 1tbsp olive oil with 50g butter. Add finely chopped red onion, saute until softened and add grated carrots. Saute for another few minutes, then add tomato paste, Vegeta, black pepper and 2tbsp paprika. Mix well and add 600ml of water. Cook for about 5 minutes.
Step 11
Add the sauce(podliva) on top of the Holubtsi, cover with the lid and simmer over low heat for about 1-1,5 hours or until holubtsi is ready.
Step 12
Garnish Holubtsi with chopped dill and serve with sour cream.
