Instructions
Preheat oven to 375°F
Step 1
Line 2 sheet pans with parchment paper for easy cleanup.
Step 2
Combine soft butter, brown sugar & sugar in lg. bowl. Mix with a sturdy rubber spatula until well-combined. Add eggs & vanilla; stir until smooth & creamy.
Step 3
Stir in baking soda, baking powder, & salt; mix until well-combined.
Step 4
Add AP flour & cornstarch; stir, just until all of the flour is incorporated. Make sure there’s no loose flour at bottom of bowl.
Step 5
Fold in chocolate chips. (If desired, reserve a handful of chocolate chips to add after baking, for a pretty presentation.)
Step 6
Scoop cookies into 3-4T-size scoops; roll each into a ball. Chill dough balls (1-24 hr.)
Step 7
Just before baking, tear each ball in half and press back together with the jagged sides up. (See the picture in the post above.)
Step 8
Place cookies on prepared sheet pans leaving 2” between each cookie. Bake (12-16 min.) until golden brown. If desired, add a few extra chocolate chips to tops of each cookie.
Step 9
Rest on pan (5 min.); transfer to a wire rack. Serve warm or at room temperature.
