Instructions
Step 1
1. Peel and chop into roast potato sizes

2. Par boil in salty water until just soft (a knife can just slide in)

3. Empty out the water, shake and fluff, leave to cool for 15 minutes

4. Pour the goose fat into your tray, don’t be shy with it, more the merrier and then get in the oven at 180 to heat up for 15minutes whilst the potatoes are resting

5. Take the tray out after the 15minutes and place the potatoes in the tray…. Be very careful the oil will sizzle

6. Now lets season…. Everyones different but my favourite is to sprinkle salt and pepper, garlic powder, rosemary, thyme over the whole tray and then add a few dolllops of Clover

7. Get the tray in the oven now at 180 for 35minutes
Step 8
8. Take out the oven, turn the potatoes and get back in the oven for roughly another 30 minutes or until crispy
Step 9
9. Take out the oven, get off the tray into a bowl
Step 10
10. They are now read to serve….
