Instructions

Prep

Step 1
(If you have whole black peppers, while you do the prep you can toast them on the frying pan of choice)
Step 2
Remove the dirt from the mushrooms with a paper towel and slice them.
Step 3
Thinly mince the pickled cucumber. Slice the chives. reserve them both. (doesn't need to be separated).
Step 4
Measure everything, if you must.

Mushrooms

Step 5
Turn up the heat to the max setting on the frying pan. Wait for it to be ripping hot.
Step 6
Add the sliced mushrooms. Stir on the first 20s until every mushroom piece is touching the pan, or the entire pan is covered.
Step 7
Add a fraction of the olive oil, and let it coat the entire mushroom surface. You can do some pan movements to make sure that the bottom of the mushrooms gets olive oil.
Step 8
DO NOT TOUCH THE MUSHROOMS!
Step 9
Once they're golden on the first side, flip them, or (if you can't) start stirring them, using only the pan movements, like if you were to flip an omelet.
Step 10
After all the mushrooms are golden, reduce heat, add salt, stir, add soy sauce, stir. After adding the soy sauce you must mix them immediately.
Step 11
Put all the mushrooms on one "corner" or side of the pan, making at least half of the pan free. Add the balsamic vinegar in the free space WITHOUT touching the mushrooms. DO NOT BREATHE THE FUMES it is ACID.
Step 12
Reduce until the bubbling drops significantly, making sure that there is no more acid left. Mix them.
Step 13
Add the butter and the black pepper on top of the pile of melting butter. Mix them.
Step 14
Add the Heavy cream immediately followed by the oregano. Mix them.
Step 15
Add the cheeses. Mix them until they are melted and incorporated.
Step 16
Turn off the heat and add the lemon juice, chives, and pickles. Mix them. xD
Step 17
Serve as you would a sauce (with meat, rice, fries, maybe fish(?)) but it is more mushrooms than sauce by a lot.
