blueberry lemon muffins

dear blueberry lovers!! these are my all time favorite muffins and i guarantee that you'll love it. they are moist and soft and the lemon flavor is a perfect contrast to the sweet blueberries... also added crumbles on top of course 🤭 enjoy!

Instructions

Step 1
Preheat your oven to 220°C.

for the batter:

- in one bowl, mix 240g flour, baking soda and 6g salt together - in another bowl, add in 200g granulated sugar, vanillin sugar, a little vanilla extract, 114g melted butter (cooled!), 2 eggs, 50ml milk and 68g joghurt - whisk the wet ingredients together - sift the dry ingredients to the wet ones - lastly, add in your blueberries and mix them in carefully (with a spoon or spatula)

for the syrup

Step 3
- add the leftover 100g blueberries, 25g granulated sugar and some lemon juice into a pot - heat it up and let it boil for about 10 minutes, don't forget to stirr frequently! - let it cool in the fridge

for the crumbs

Step 4
- mix 60g flour, 30g granulated sugar, 10g brown sugar, lemon zest, salt and 30g melted butter into a bowl - it might occur that the texture isn't perfect yet, if that's the case, just add in a little flour and combine until the crumbs are to your liking (prefereably the size of a pea)
Step 5
Lastly, fill the batter into your mold and add the syrup and the crumbs ontop.
Step 6
Bake the muffins at 220°C for 15 minutes, then reduce the temperature to 180°C and bake for another 10 minutes. Make sure to let them cool before eating and enjoy!
