Step 1
Melt 1 Tbsp of butter in the bottom of your pot and melt over med-high heat. Add the diced onions and celery and saute until starting to get soft, about 3 minutes. Add garlic powder, salt, and pepper.
Step 2
1. Add the potatoes, ham, and broth to the stock pot with the onions and celery. Bring to a boil, then cook over medium heat until potatoes are tender, about 10-15 minutes. Add more salt and pepper if desired.

2. In a separate sauce pan, melt 5 Tbsp butter over medium-low heat. Whisk in flour and cook, stirring constantly until thick, about one minute. Gradually stir in the milk as to not allow lumps to form. Continue stirring over medium-low heat until thick, about 4-5 minutes.
Step 4
Stir the milk mixture into the stock pot with the potatoes and cook for just a few minutes to allow flavors to combine. Serve immediately with your choice of toppings: shredded cheese, bacon crumbles, chives, etc.
