1 Tbsolive oil
19 ozground turkey
11 ozground sausage
1yellow onion
diced
2 cupsvegetable stock
28 ozcan of crushed tomatoes
15 ozrotel
15 ozkidney beans
drained and rinsed
1chipotle in adobo
1 Tbsgarlic
minced
1 Tbschile powder
1 Tbsancho chili powder
½ tsppaprika
½ tsporegano
½ tspcayenne pepper
½ tspground cumin
½ tspsalt
½ tspground black pepper
1 Tbsbrown sugar
1jalapeno
diced
1bell pepper
chopped
1zucchini
large, chopped
1poblano pepper
chopped
1orange bell pepper
chopped
Instructions
Step 1
heat oil in a large pot over medium heat. Place turkey and sausage in a pot (batches if necessary) and brown evenly. Remove, strain and set aside.
Place onion, garlic peppers into pot and cook until tender. Put browned turkey and sausage mixture back into pot and stir in chipotle in adobo and sauce.
Pour stock into pot and mix in crushed tomatoes, rotel and kidney beans. Add both chili powders, paprika, oregano, cayenne, cumin, salt, pepper and brown sugar. Bring to a boil. Reduce heat to low, cover and simmer for 30 mins. Add salt, pepper or other spices to season.
Add zucchini and cook for 20-30 mins, until zucchini is tender but not mushy.
