Step 1
Boil the pasta for 10 mins, then drain.
Step 2
Fry the courgette in a pan on high heat (no oil) until brown. Add garlic and cook for 1 minute.
Step 3
Then add creme fraiche, 100ml water, vegetable stock, simmer until thickened (3-4 mins).
Step 4
Add prawns and (if raw) stir until cooked through (4-5 mins).
Step 5
Finish with lemon zest, juice and parsley. Season to taste.
