Step 1
Step 1.Start mash , In a large pan add peeled potatoes halved or quartered bring to boil in salted water then simmer for 20 - 25 mins until tender drain allow to thoroughly steam. Then mash adding butter 30 mls hot milk and half the cheese season to taste with salt and white pepper Optional step.
Return to low heat for few minutes after draining and keep pan moving to avoid potatoes sticking helps to thoroughly steam off/dry potatoes then mash as above

Step 2. cut and prepare fish and prawns saving any skin or shells arrange in baking dish 2ltr (4 people) or 2-5ltr (6 people )season with salt and pepper

Step 3. Start sauce.
Gently heat milk and infuse with reserved fish skin ,shells ,bay leaves half a small onion , few cloves for 8-10 mins. If you’re without shells or skin just gently poach the fish for few mins instead or use half a fish stock cube

Step 4. Strain and reserve infused milk for sauce

Step 5. In same pan make rue then add reserved milk ,once smooth add lemon zest , juice, wine and parsley until it feels quite thick, remove from heat and add half of the cheese combine return to heat if necessary cheese doesn’t need to be fully melted

Step 6. Allow sauce to cool slightly then combine with fish mixture

Step 7. Spread frozen peas over mixture, helps to cool sauce further
Step 8

Step 8. Press prawns into pie I allow 2 per portion imagine a grid/portion and spread accordingly
Step 9

Step 9. Add mash I like to pipe it on from a bag but can just spoon it on

Step 10. Cook for 50 mins , leave to rest for 10 before serving
