Cheesy Cod & Spinach Gratin With Crispy Potatoes

Instructions

Step 1
Preheat 200⁰c and boil half a kettle. Slice the potatoes into 1cm discs (skins on)
Step 2
Add the potato slices to a baking tray.
Step 3
Drizzle the potatoes generously with vegetable oil, then season generously with both salt and pepper.
Step 4
Put the tray in the oven for 20-30 min or until the potatoes are cooked through and crispy - these are your crispy potatoes.
Step 5
While the potatoes are in the oven dissolve veg stock mix and the soft cheese in 100ml [150ml] boiled water - this is your creamy stock.
Step 6
Grate the cheddar cheese.
Step 7
Wash and drain the spinach, then add it to an oven-proof dish.
Step 8
Pour the creamy stock all over the washed spinach
Step 9
Place the cod fillets on top of the spinach and season with a pinch of salt and pepper.
Step 10
Sprinkle the panko breadcrumbs and grated cheese all over the fish Drizzle over a little olive oil and put the dish in the oven for.
Step 11
15-20 min or until the fish is cooked through - this is your cheesy cod & spinach gratin.

Tip: Your fish is cooked once it flakes easily

Serve the cheesy cod & spinach gratin with the crispy potatoes to the side.
