Instructions

Step 1
Add the warm water, honey, yeast and 1 tbsp of olive oil to a bowl and stir.
Step 2
Then add the flour and salt. Mix thoroughly until the dough has formed and then cover and leave for 15 minutes.
Step 3
Wet your hands and then fold the dough over itself 4 - 6 times. Cover for another 15 minutes and repeat this process 4 times in total. 15 minute intervals, 4 - 6 folds each time.
Step 4
Then pour over a tbsp of olive oil, cover the bowl with cling film and leave in the fridge overnight or up to 48 hours.
Step 5
Remove from the fridge, the dough should be nice and smooth and full of bubbles.
Step 6
Place some baking paper in a baking tray and add olive oil. Scoop the dough into the tray, cover and leave to proof for 2 hours at room temperature.
Step 7
Oil your hands and dimple the dough, this allows the dough to form lots of even bubbles and creates great texture.
Step 8
At this point you can top the dough with whatever you like, olives, confit garlic, rosemary etc and add a generous pinch of sea salt along with lots of olive oil.
Step 9
Preheat oven to 220c/430f and bake on the middle shelf for 25 minutes.
Step 10
Remove from the oven, leave to cool for 15 minutes in the tray and then place on a wire rack for another 30 minutes.
Step 11
Slice and enjoy!
