For the Chicharron

Instructions
Step 1
1. Slice pork belly into strips and place into a large pot along with chopped red onion, garlic, bay leaves, black pepper and a large pinch of salt
Step 2
2. Boil pork for 20-30 mins before taking out and patting dry with paper towel
Step 3
3. Heat up frying oil in a large pot over medium heat for 10-15 mins
Step 4
4. Fry pork belly strips for 20 mins or until golden brown. Take out onto a wire rack over a baking tray lined with paper towel. Season generously with flakey salt
Step 5
5. Cut open and scoop out avocado into a bowl and mash with a fork/potato masher. Add fresh coriander, diced onion, diced tomato with the centre removed, 1 tbsp salt and the juice of 2 limes. Mix guacamole together with a spoon
Step 6
6. Scoop guac with Chicharron and enjoy.
