Instructions

Step 1
Preheat oven to 300 degrees Fahrenheit (I cook it at a little higher temperature 325 to 350)

Mix together the flour, salt, baking powder, baking soda and the spices in a medium bowl.
Step 3
In a large mixing bowl, beat together the sugar and oil then add the eggs one at a time.
Step 4
Then add the dry ingredients to the egg mixture, mix well. Finally stir in the two cups of grated carrots and the chopped walnuts.

Pour into a 9x13" non-stick pan or a large, round cake pan (Pan must be greased and floured or lined with parchment paper)

Bake for 50-60 minutes or until done. Toothpick inserted should come out clean.
Step 7
Icing: beat together 1/2 cup butter (softened) and 8 oz. package of cream cheese (Philadelphia). Add icing sugar little at a time up to 1 1/2 cups.

Add 1-2 teaspoons liquid vanilla essence

(I generally use only about 2/3rds of this recipe as it makes a lot) Allow cake to cool thoroughly. Place upside down on a large cake plate. Gently rub top and sides of cake with fingers or a paper towel to remove loose crumbs (so the crumbs do not get mixed into the frosting). Then, place the frosting in the middle of the top of the cake. Spread gently and lightly covering the top and sides with a knife or spatula.

Keep in refrigerator.

PS it is possible to cut the cake in half (once cooled) to make two separate layers. Then you would need to whole recipe for the frosting as you will need to spread the frosting on top of both layers.
