¼ cupolive oil
1yellow onion
chopped
1Green pepper
large, chopped
1 tspgarlic
mashed
1.5 pdsground meat
or turkey
¼ tsponion powder
2 tsporegano
½ tspcumin
14.5 ozdiced tomatoes
no juice
Pimientos
sliced
¾ cuptomato sauce
½ cupvino seco
1 ½ tsppaprika
¼ teaspoongarlic powder
4 packetssaffron
1 tspsalt
⅛ tsppepper
2Russet potatoes
diced
water
if needed
2bay leaves
¾ cupsSpanish olives
in quarters
Instructions
Step 1
Spray non-stick spray in pot. Stir in the meat and stir for a few minutes so that it doesn't stick. Drain and set aside.
Step 2
In same pot, heat the oil and sauté the onion, the garlic, and the pepper. Stir in and mix cooked meat.
Step 3
NOTE: Air Fry cut potatoes in pieces doused with oil at 350° for about 10 min. Then add to meat
Step 4
Add the remaining ingredients, diced potatoes (add water if needed) and let cook at medium heat for about 20 minutes or until potatoes are cooked.
Step 5
Add the sliced olives and let it all cook for another 10 minutes.
Step 6
Taste to see if it needs a little more salt. ¡Aprovecho!
