Instructions

Step 1
Preheat oven to 400F.
Step 2
Add 1 tbsp olive oil to large dutch oven, set over medium high heat. Brown chorizo on all sides until golden brown, 8-10 minutes.
Step 3
Transfer chorizo to a plate. Season chicken lightly with salt and pepper, brown pieces on both sides. Transfer to the plate with the chorizo. Reduce heat to medium and add the onion, potatoes, bay leaves, thyme, apple, tomatoes and tomato paste. Season with salt and pepper, cook for 6-8 minutes stirring frequently.
Step 4
Add the white wine and stir up any browned bits. Add the chicken stock and peppers to the pot. Slide the sausages and chicken into the pot, submerging them as best you can. Sprinkle with smoked paprika.
Step 5
Place the pan in the own and cook for 35-40 minutes or until the potatoes are fully tender. Serve with crusty bread for sopping.
