Step 1
Heat oil in large saucepan over medium heat. Add prosciutto and cook, stirring often, until crispy, about 6 minutes. Using slotted spoon, transfer prosciutto to small bowl. Add onion, celery, and ½ teaspoon salt to saucepan and cook until softened, about 5 minutes. Add bay leaves and garlic and cook until fragrant, about 1 minute. Add beans and their liquid; cover; and cook until beans soften slightly, about 8 minutes. Discard bay leaves. Pour bean mixture into blender. Process until smooth, about 1 minute. Add Parmesan, vinegar, and 1¼ cups hot tap water and process for 1 minute, adding more hot tap water as needed to achieve desired consistency. Add salt and extra vinegar to taste. Ladle soup into bowls and garnish with prosciutto. Serve.
