Instructions
Step 1
preheat oven to 200oC
Step 2
lightly grease a baking dish with oil
Step 3
bring a large pan of salted water to the boil over a high heat and cook the pasta
Step 4
drain well, reserving a little pasta cooking water, set aside
Step 5
heat the oil in a large pan over a high heat
Step 6
cook the chorizo for 3-4 mins or until lightly golden and crispy
Step 7
add the chicken and cook for five mins until golden brown on all sides
Step 8
add the garlic and oregano and cook for 1 min
Step 9
stir in the passata and chopped tomatoes and bring to a simmer
Step 10
add the basil, cream cheese and some seasoning
Step 11
stir until the cheese has melted into the sauce
Step 12
add the pasta and mix well to combine, adding a splash of the reserved pasta water to loosen, if needed
Step 13
transfer to the prepared dish and scatter over the parmesan and mozzarella
Step 14
bake for 20-25 mins until the top is golden brown
