1 cupplain Greek yogurt

3 tablespoonsunsweetened vanilla almond milk

2bananas
ripe, mashed

2 tablespoonsbutter
melted

1egg
large

¼ cupbrown sugar

2 teaspoonvanilla extract

¾ cupoatmeal
large flake, plus extra for the tops

1 cupwhole wheat flour
Soft

½ cupflaxseed meal

1 ½ teaspoonsground cinnamon

¼ tspnutmeg

1 teaspoonbaking soda

½ teaspoonbaking powder

¼ teaspoonsalt

130gdark chocolate chips
plus extra for the tops
Instructions
Step 1
1. Preheat oven to 400 degrees F. Line a 12 cup muffin pan with liners and spray the inside of the liners with nonstick cooking spray.
Step 2
2. In a large bowl mix together the Greek yogurt, almond milk, mashed banana, butter, brown sugar, egg and vanilla until smooth and well combined.

3. Stir in large flake oats. Allow the mixture to sit for 10 minutes to soften the oats.
Step 4
4. Once 10 minutes is up, add the whole wheat flour, flaxseed meal, baking soda, baking powder, cinnamon, nutmeg and salt. Stir until just combined. Fold in chocolate chips.

5. Using a 1/4 cup measuring cup or an ice cream scoop, divide batter evenly into the liners. Bake for 7 minutes at 400 degrees, then reduce heat in oven to 350 degrees. Do not open the oven door!

6. Bake for 14-16 minutes or until tester comes out clean or with just a little batter attached.

7. Allow to cool for 5 minutes in the muffin pan before transferring to a wire rack to finish cooling.
