Step 1
Preheat oven to 450. Wash and dry produce. Dice potatoes into half inch pieces. Toss onto baking sheet, drizzle with oil and season with salt and pepper. Roast on middle rack until til lightly browned, about 20-25 minutes.
Step 2
Pat pork dry with paper towel. Season with salt and pepper. Heat a drizzle of oil in a larch pan on medium-high heat. Add pork to pan and cook, turning occasionally until browned all over, about 6-8 minutes. While pork cooks, trim green beans if necessary. Mince garlic.
Step 3
Once potatoes have roasted for 10 minutes, remove from oven and add green beans to sheet. Drizzle beans with oil and season with salt and pepper. Return to middle rack and cook until veggies are tender, about 10-12 minutes.
Step 4
Once pork is browned all over, transfer to a second baking sheet. Roast on top rack until pork is cooked through, 8-12 minutes.
Step 5
Heat drizzle of oil in a pan used for pork over medium-high heat. Add garlic and thyme., cook until fragrant, about 30 seconds. Stir in concentrate, honey and ¼c water. Simmer, scrapping up any browned bits from bottom of pan, until reduced by half, 3-4 minutes. Stir in 1 tbsp butter until melted. Season with salt pepper.
Step 6
Let pork rest 2-3 minutes, then thinly slice crosswise. Divide food between 2 plates and serve.
