Caramel Pecan Rolls - Small Batch

When its just a few people and you don't want to eat the WHOLE thing. This makes 5 or 6 rolls. So easy coming together too.

For the Dough
0.33 Cmilk
warm, 110 degrees
2 ½ tspinstant yeast
1 ½ Tbspsugar
155gall purpose flour
½ tspsalt
1 Tbsporange zest
57gunsalted butter
melted

Instructions
Step 1
In your warmed milk add the yeast and sugar and let bloom for 5 minutes
Step 2
In a medium bowl mix flour and salt. Add in yeast mixture and melted butter.
Step 3
Form dough and knead for 2 minutes. You may need an additional 1 tbsp flour.
Step 4
Place back in bowl, cover and let rest 30 minutes.

While dough is resting make topping
Step 6
In small saucepan add sugar, butter, milk and chopped pecan and bring to a boil. Using a thermometer you should reach Soft ball stage 235 degrees Fahrenheit.
Step 7
In a 8" pie pan lay halved pecans in pattern then pour caramel mixture over and let sit.
Step 8
Make filling by combining all ingredients

Roll our the dough to about 12 x 12" and spread filling all over and roll. Cut into 5 or 6 pieces and place over caramel cut side up.
Step 10
Let rest 20 more minutes and preheat oven to 375 degrees F.
Step 11
Bake for 20 - 25 minutes; let cool 5 minutes.
