Simple, traditional, roasted greek potatoes.

Instructions

Step 1
Peel and cut potatoes into wedges. Cover generously with extra virgin olive oil. Salt to taste. 1-2 fresh lemons squeezed. Quick toss. I like to leave the squeezed lemon in the roasting pan. Cover with foil and bake at 400 degrees for 45 minutes. Toss once half way. Cover and continue. Next remove the foil and broil until you hit the brown you like. I go light broil. Center of the oven for 15 minutes. Platter potatoes and drizzle with a little extra virgin olive oil.
