Instructions

Step 1
Soak porcini for a min of 15mins in 200ml of just boiled water.
Step 2
Trim fatty lumps from meat, keep membrane. Season and dust both sides with flour.
Step 3
Great oil and butter. Brown meat on medium high heat then remove.
Step 4
Soften veg for 5 mins on low/ med heat.
Step 5
Raise heat, add wine and bubble will for 2 mins.
Step 6
Remove porcini, squeeze excess liquid, chop and add to pan, keeping the liquid. Add the liquid and passata to the pan.
Step 7
Heat mix and add meat to pan in a single layer. Cover and simmer VERY gently for 2 hours. Turn meat after 1 hour, pushing out any soft marrow.
Step 8
Meat should be soft when ready. Sauce thick, may need to be reduced. Bone should have a hole in.
